Dinner
Time!
I'm
a bachelor so it's no surprise that I eat bachelor
food. My favorite kinds of grub are massive quantities
of
home-cooked
meals
that I can enjoyably live off for days, even
weeks,
at a time.
Five minutes preparation, tops, is my goal.
So you can imagine my delight upon discovering a couple
of one-cup recipes. The first
is
a Coffee
Cup scramble.
Take a basic coffee cup and add a couple of eggs, a
splash of milk, salt, pepper, and dried basil (optional,
but tasty). Give it a whisk to mix it up, then toss
in a slice of
bread,
broken into dime-sized bits. Stir that up and
let it set a moment for the bread to soak up the juices.
Then take a slice of cheese, tear it into little bits,
and also mix that into the mixture. Microwave
this for about 90 seconds and you have a fluffy,
delicious breakfast. Keep some toast in reserve to
soak up the yummy gunk on the bottom.
The second recipe is even better: a brownie-in-a-mug.

You take the same microwavable kind of coffee cup and
toss in a 1/4 cup flour,
1/4
cup
sugar,
2 Tbsp of cocoa, and a pinch of salt. Pour in 1/4 cup
of water and 2 Tbsp of oil. Mix it up, microwave that
little sucker for 90 seconds and you'll have yourself
a luscious little treat. This is even better if
you have some ice cream
to plop
on top.
Now all I need is a good, one-cup eggplant
parmigiana recipe and I'm set.
