mr. t chia Did you know that chia seeds, the very things that give Chia Pets their distinctive shape, are not only edible but very good for you?

Iiiiiit's TRUE!

Flax is heavily marketed as one of the new super- foods, I use it and like it, but chia seed trumps it in many ways.

First, it's chock-full of omega-3 fatty acids and is so rich in antioxidants that it can be stored for a long periods of time without becoming rancid. Very important for such an oil-rich food. (Like flax it can actually be used to replace the oil in certain recipes.)

Second, unlike flax or quinhoa, you can eat it raw. And when mixed with water it turns into a gel that releases nutrients more efficiently in the digestive system.

It also provides fiber (25 grams give you 6.9 grams of fiber) as well as calcium, phosphorus, magnesium, manganese, copper, iron, molybdenum, niacin, and zinc.

This is where I try to draw a connection between the topic above and the problem of hunger in this country... and it is a problem. While it would be ideal to bake all these 17 million hungry kids a big stack o' homemade chia-waffles it's probably a better idea if we all chipped in and supported our local food banks with a generous financial donation.
